Having been in the food and beverage industry for the last 11 years, Hungie has steadily risen to his calling as the face of perseverance in an industry where turnover is notoriously high. Hailing from Hong Kong, Hungie started out as a humble waiter at a noodle joint. Through the next few years, he soldiered on at other restaurants and cafes, until landing a job at Armani Bar.

In 2008, came the key turning point where he joined the team at FINDS, and his bartending career began to take off. FINDS features award-winning Nordic cuisine by celebrity chef Jaakko Sorsa and exciting molecular mixology. It was also where Hungie met Antonio Lai, Hong Kong’s very own renowned mixologist, who was then just beginning to experiment with his signature style of multi-sensory mixology.

Given the dynamics of the pair’s past working relationship, it was only a matter of time before they were working together again, first at The Envoy and now at Origin, Hong Kong’s first gin bar, where Hungie has curated a solid cocktail menu.

Hungie was a Finalist in the Peter F. Heering Sling Awards 2015.

Hungie's Tiger Tiger Plum

Tiger Tiger Plum is a South East Asian brand of plum sauce and this cocktail draws inspiration from one of the staple Singaporean dishes, “Roast Chicken with Sweet Plum Sauce”.

Glass: Sling
Garnish: Dehydrated orange wheel, pineapple leaves
Method: Shake first 8 ingredients with ice and strain into ice-filled glass. Top with soda.

• 40ml Gin
• 20ml Cherry Heering
• 10ml Plum Wine
• 10ml Fino sherry
• 15ml Lemon juice
• 10ml Simple syrup
• 2 dashes Orange bitters
• 2 dashes Angostura Aromatic Bitters
• Top up with Soda Water
