Originally from Sao Paulo, Rogerio has been mixing up Brazilian influenced drinks in Toyko for over 15 years.

Now at Bar Trench, a tiny space with only 13 seats, Rogerio focuses on craft cocktails. The menu changes four times a year so that the local and international crowd always have something new to try.

"To celebrate 200 years of Heering Cherry I would like to share a cocktail with everyone. Japan and Heering have a long relationship. It was one of the first products to be imported by Suntory in 1899. Since then it has been in the most important bars in Japan.

The Rum Hunter cocktail originates from the classic Hunter cocktail which is popular in Japanese bars.

Originally The Hunter is a bourbon base cocktail. I decided to use a bourbon matured Rum with bitters which give a more fruity flavour, together with Heering, and is perfect for the spring and the cherry blossom season in Japan.

The Rum Hunter

Glass: Silver cocktail glass
Garnish: a sword with two maraschino cherries
Method: Stir all ingredients with ice and strain into chilled glass.

• 45ml Fair Rum 5 Year old
• 15ml Cherry Heering
• 2 drops Dutch Colonial Bitters

Rogerito's Sling

Glass: Highball
Garnish: Maraschino cherry
Method: Shake all ingredients (except Cherry Heering) with ice and strain into ice filled glass. Top with Cherry Heering.

• 45ml gin
• 30ml pineapple juice
• 15ml lime
• 10ml Cherry Heering
• 5ml Benedictine
• 5ml grenadine
• 5ml Cointreau
• 5ml cream
• 1 dash Underberg
• splash sparkling water
