Glassware: Cockatoo glass, Ceramic Plant Leaf and Plum Seeds.
Garnish: Dehydrated Plum Leather and Plum Foam.
Method: Add ingredients into shaker with ice, shake and fine strain. Garnish with dehydrated plum and plum foam.
Inspiration: Cockatoos are iconic and rare birds known for their majestic appearance, sociable and lively personalities, basically like Italians and Cubans working behind the bar together.
