Originally named The Old Curiosity Distillery and established in October 2017 by Scottish herbologist, Hamish Martin and his business partner Steve Ross, the distillery is housed in a converted barn within the Secret Garden, a 7.5-acreo herb garden at the foot of the Pentland Hills on the outskirts of Edinburgh, also owned by Hamish. The garden boasts 600 naturally grown and tendered varieties of herb - not to mention the UK's biggest crop of apothecary roses.
Many of the botanicals used to flavour and indeed colour the gins made at The Old Curiosity Distillery are hand-picked from the gardens where they are grown without the use of any chemicals (not even organic ones). These are distilled with neutral spirit in a 100 litre alembic still and a smaller 20 litre still.
