I'm Caroline, co-founder and lead bartender of Les Folies d'Edmonde in Vieux-Nice. I pulled my first service shifts behind the counter of an Irish pub during my student years in Dijon, opened a restaurant young, and in May 2022 opened this bar with my sister Aurélie — named after our grandmother Edmonde, whose apricot-and-cognac serve became our house signature. I write every recipe on the menu, where each cocktail carries a family first name, and I run our daily mixology classes.
