Chase use their own organically grown cider apples, ferment them into cider, then distil into vodka using the same stripping still and rectification column used to make their potato vodka. At this stage the rectified apple spirit is diluted with the farm's own well purified water and bottled as Naked Chase Vodka.
William's Gin is finished in a 450-litre purpose made Carl steam jacket-heated copper pot still, topped with a single bubble plate and small reflux condenser. A vapour botanical chamber sits in the Lyne arm forcing the vapours to pass through a pillowcase loaded with the botanicals within the chamber on their way to the condenser.
The still is charged with rectified cider spirit at 96% diluted back to 45% alc./vol. with well purified water before the eleven botanicals are added. Heads, of around ten litres are discarded before a heart of around 200 litres can be collected at an average of 72% alc./vol.. Chase cut to tails at around 65% alc./vol.. Chase is what some would refer to as a 'two-shot' gin as the botanical flavoured distillate is cut 50/50 with neutral cider distillate before being hydrated to bottling strength with well purified water.
