The Žatec brewery was built in 1801 and lies within the Žatec castle walls. The town of Žatec is famous for the quality of its hops fields which benefit from a combination of the dark red soil which is rich in ferrous oxide and so water retaining and favourable climatic conditions.
The brewery, which suffered from a lack of investment during the communist regime, was purchased by Rolf Munding in 2001 who, with the help of respected Czech brewer, Tomas Lejsek, has introduced new technology. Unusually, Žatec retains traditional open fermentation vats and underground horizontal lagering tanks dating back to 1835. Brewed using Žatec hops (in three different stages of the brewing process), Moravian malt and locally sourced water, Žatec is lagered for 45 days.
Žatec is naturally carbonated during fermentation and no CO2 is added. The brewery employs the double decoction method, where the wort is transferred back and forth between two mash tuns, so releasing as much brewing sugar as possible.

(best before 14-May-13) Clear, bright golden-yellow with moderate head which quickly fades to thin surface foam with light lacing.
Subdued, one dimensional light malty aroma.
A tad bland but clean with light, slight sweet bready maltyness and delicate hop bitterness.
Short, dry toasty bread crust with a dried apple notes.
