Launched August 2012, Montelobos is a 100% Espadin, unaged, organic mezcal developed by Dr Iván Saldaña, a respected agave academic.
The agaves used to make Montelobos are cultivated by the Lopez family in the shadow of Montelobos (mountain of wolves) in Oaxaca's Sierra Madre range. They are harvested and cooked the traditional manner, smoked in a large stone pit ('palenque') for 4-5 days, before Rambo the mule pulls a tahona wheel over the cooked agaves to crush them and release the smoky agua miel to ferment and distil. The still is part pot and part column.

Coal dust and coal tar with faint notes of burnt crispy bacon, char-grilled vegetables, menthol and smoke. Attractive faint floral aromas.
Dusty coal with vanilla, honey sweetness, char-grilled peppers and cracked black pepper.
Palate slowly fades with mild smokiness, lingering crispy bacon and black pepper spice.
