Akashi-Tai’s Daiginjo (pronounced ‘Die-Ging-Jo’) is a luxury sake (60% milling, malted rice and distilled alcohol) made only in the mid-late winter months from the highest grade Yamada Nishki rice grown in Hyogo Prefecture.
A brew master watches over the koji for 72 hours without sleeping to ensure the quality of this sake.

Aparência:

Clear, very faint straw yellow.

Aroma:

Fragrant green apple skin with light honey and faint caraway

Sabor:

Equally appley palate with slight saltiness a very faint hint of lychee and aniseed.

Aftertaste:

Dry and faintly salty with more apple and very faint hints of yeast extract.
