Serve in a Collins glass

Ingredients:
60 ml Hayman's Old Tom Gin
22.5 ml Lustau Manzanilla Papirusa Sherry
15 ml Lemon juice (freshly squeezed)
0.9 ml Saline solution 4:1 (20g sea salt to 80g water)
4 gram Black pepper
10 gram Rocket/Arugula salad leaves
75 ml Thomas Henry Bitter Lemon
