SHAKE all ingredients with ice and strain into ice-filled glass (preferably a chunk of block ice).
Special Ingredient #1: Pineapple Ancho Shrub
Blend equal parts pineapple juice and sugar and leave to rest for 2 hours. Add equal parts white wine vinegar and leave for 24 hours. Then add a teaspoon of chipotle sauce and blend.
Special Ingredient #2: Clove Honey
Add equal parts honey, water and a handful of cloves to a pot and heat at 180˚C for 25 minutes stirring constantly.
