Ingredients:
2 oz Bacardi Carta Blanca Superior White Rum
12 oz Strucchi Bianco Vermouth
13 oz Celery juice (freshly extracted)
12 oz Lime juice (freshly squeezed)
12 oz Agave syrup
56 oz Thomas Henry Soda Water

How to make:

SHAKE first 5 ingredients with ice and fine into ice-filled glass. TOP with soda water.

History:

Danish Bacardí Legacy 2015 winning cocktail by Jonas B Andersen at Strøm Bar in Copenhagen. Jonas' original recipe calls for 3 x 2cm chunks of fresh celery to be muddled with the lime juice and agave syrup in the base of the shaker before other ingredients are added. We have simply used freshly extracted juice in preference to muddling.

My inspiration for Harlequin goes back to some research I once undertook in which I found reference to something called a 'celery tonic' - which I imagined as having a bright green colour and bitter flavour. I used this tonic as inspiration and thought it would work well with Bacardí Carta Blanca.

"I tried many ways of giving the drink bitterness but eventually settled on using Martini Bianco vermouth; it matched both the rum and the celery beautifully. The drink came together with the addition of fresh lime and agave syrup to give it balance, body and richness. I decided to call it Harlequin because the drink has strong characteristics that work well together.

Mmm! Oh! Gimme some more of that. A win well deserved. I'd maybe add a couple drops of saline and/or a dash of celery bitters. But I downed that way too quick. Did I mention I love celery?
