Bitters
Combine all ingredients except for one dash of the bitters in a cocktail shaker and dry shake for 15 seconds. Add ice and shake vigorously for 15 seconds, until light and frothy. Double strain into a coupe. Dash the remaining dash of bitters on the top for garnish.

3/4 fl oz | Lemon juice (freshly squeezed) |
1/2 fl oz | Sugar syrup 'simple' (1 sugar to 1 water, 48°Brix) |
1/4 fl oz | Giffard Caribbean Pineapple liqueur |
3 dash | Ancho Reyes Verde chili liqueur |
2 dash | Peychaud's Aromatic Bitters |
3/4 fl oz | Egg white |
