Combine all ingredients in a shaking tin with ice. Shake until chilled and diluted. Strain into a chilled martini glass studded with burnt sugar.

1 fl oz | Courvoisier VS*** |
1 fl oz | Belle de Brillet pear liqueur |
3/4 fl oz | Lemon juice (freshly squeezed) |
