Eau-de-vie means ‘water of life’ and is the French term for brandies made from a fruit other than grapes. Produced in France, Germany, Yugoslavia and Scandinavia, these ‘fruit brandies’ are clear and colourless and generally sold at 40 - 45% alc. /vol.
Piore William is a particular variety of pear favoured by distillers for making eau-de-vie.
