Evan is one of the most environmentally aware bartenders and so is striving to take Re-, his venue in South Eveleigh, Australia, zero-waste by the end of the year. Hence, it will not surprise those that know him that, with his Martini Syndicate initiative, he won the Ketel One Challenge at World Class 2021. Beyond the environment, Evan is a very talented all-round bartender and this earned him a well-deserved third place in the overall World Class final.

Evan's initiative

Globally, our most pressing environmental challenge is climate change. Australia, a dry continent beset by bushfires, is already impacted. Historically, our industry has been an environmentally unconscious one, but bartender-led initiatives like the Martini Syndicate can help address that.
 
Participating syndicate venues will contribute one dollar per sale of a Ketel One special to a carbon offset fund, (with June contributions being matched from my national prize purse).
 
But carbon offsetting can be a shallow exercise. Australia is home to the oldest living culture on Earth, a vulnerable and marginalised one in many ways. There is no ethical path forward in this country that does not value, promote and learn from Indigenous culture.
 
Therefore, the primary carbon credit partner we've chosen is the Aboriginal Carbon Foundation. Through this partnership, this syndicate can have a genuine impact in Aboriginal communities as it simultaneously and ethically offsets some of our industry's carbon footprint. The ACF runs reforestation and other carbon projects that provide local employment, and apply traditional ecological knowledge and Indigenous-led land management practices, including bushfire mitigation. It builds wealth for Traditional Owners and communities. As Australian bars offset their carbon output, they also promote the cultural knowledge that maintained this country for millennia.
 
The Syndicate is already operating and gathering support nationally, but it has global potential. The partner projects may vary from country to country, but it is a simple example of how the industry can, indeed must, collaborate to be better, for better.

The Tulip

Glass: Wine and Flute Glasses - Amber Flute
Garnish: 4 drops of Lemon Myrtle Oil
Method: Add all ingredients to a mixing glass with fresh ice. Stir for 15 seconds, ensuring ice is topped up into the mixing glass as it dilutes down. Strain into a freezer-chilled "Amber Flute".

Ingredients:
45ml Ketel One Family Made Vodka
30ml Apple Butter
5 Drops Pepperberry Vinegar
5 Drops Saline Solution (20% Sea Salt and Water).
