According to an FAO study (2011), it is estimated that 30 to 50% of global food production is lost between the field and the plate. 3/4 of these losses appear during harvesting due to the demanding standards imposed by the dealers.

How to act and involve the community in responsible consumption at our level? My project consists of the recovery and processing of unusual or ugly fruits. This aims to have an impact on the producer (+ profits - losses), on "no waste" ecology, on the local economy by short circuit, and on the community by conveying the idea of consumption. Clean and sustainable with also the creation of a solidarity compost. This is a key gesture in the fight against food waste.

By using local products, we reduce the carbon footprint for the planet, we support small businesses and we save on our food budget. There is a big saving behind the less classic but equally delicious appearance inside these slightly different fruits and vegetables. By getting into the habit of buying the fruits and vegetables that nobody wants, we can make a difference on our scale. More than a citizen gesture, it is a solidarity gesture.

Sparkling Bloody Ugly

Glass: Highball Glass - Nude Mirage
Garnish: Parmesan mousse and dried tomato skin powder on a bamboo spoon
Method:
- Refresh the glass
- Pour 35ml of Ketel One Vodka
- Top with all the "Ugly Mix"
- Gently stir
- Garnish with a Parmesan mousse and dried tomato skin powder on a bamboo spoon
-Mix all the ingredients in rolls without ice.
-Filter with a minimum 100 micron superbag.
-Carbonate, bottled.
-Keep cold for 2 hours

Ingredients:
35ml Ketel One Family Made Vodka
Ugly Mix :
- 10ml Smoked Vodka Ketel One Family Made Vodka
- 15ml Ketchup Strawberry/Tomato
- 20ml Sherbet Lemon/Lime
- 120ml Tomato Water
- 5 drop Worcestershire Sauce
- 1g Mix Spiced
