Thomas Aurélien started his career in the bar industry at the Fouquet's, the most popular bistro on the Champs-Elysées.

He has always been looking for a new challenge to grow with his personality, thus he moved to Peninsula Hotel Paris to later pursue his dream in Saint Barth island where he could learn and improve more classical tricks and twists.

Today he is the Head Bartender at the Jacques Bar, Hoxton Paris, where he expresses his Parisian touch and personality behind the bar.

Inspiration:
Our cocktail inspiration is the main theme of Jacques's bar, healthy and classy, we try to please the palate of our customer by serving seasonal and original ingredients, and as much as we can within the local product specially dill and roquette, verjus is the new lemon juice as well on the french mixology scene, the overall clean and citrus notes from italicus adjust our will to keep this secret garden as fresh and funky as the bar Jacques's bar is an intimate cocktail bar accessed via an original 18th century spiral staircase, secret place in Hoxton hotel, has a kitsch theme, coloured cocktail is our inspiration from the 70,s 90,s, banana, long drinks, simple and efficient menu.
