The cocktail bars based in "Rive Gauche" (left bank) can be counted on the fingers of one hand, still near Saint-Germain-des-Prés you can find one of the best places for drinks: Castor Club.
What hides behind this amazing name? At the first look, a strange wooden façade, reminding you of a hut in Canada. Very incongruous in this chic area. Inside, a very cosy and narrow spot decorated in wood and deep green velvet, with stylish suspensions. A weekends downstairs is party-like with a DJ, or take a seat near the bar and enjoy the drinks while listening to vintage American music.
The owner, Thomas Codsi is a talented bartender and prepares his own infusions, shrubs and syrups. For his cocktail menu he finds inspiration among the classic drinks and adapts them to add complexity. The Castor Club can be a little cramped but the staff are attentive and whether you're new to cocktails or an expert, you'll find the perfect drink to suit your mood.
One of the best-sellers is called Chirac 95, a reference to the famous French President (who never visited the Castor Club) made of Calvados Drouin Selection, Génépi des Pères Chartreux, apple shrub, egg white and lemon. The Castor Club is becoming a meeting point for the Parisian bar community.
