Salvatore Calabrese's first Asia opening is the latest in what's becoming quite the empire - and, surprisingly, it's on the Kowloon side of Hong Kong, in Tsim Sha Tsui, no less. The 21st floor space boasts stunning views across Kowloon and the Harbour to Hong Kong island: the topographical map of Victoria Harbour in the bar top pays tribute to it.
We visited (late March 2016) very early during soft opening (hence our not grading), but the space was looking good, with sinuous silver sofas and bar stools, and an impressive wine cellar focused on boutique wines. Salvatore's signature creations were all present and correct - the Breakfast Martini, the Spicy Fifty, and the Negroni Svegliato, served from a classic moka espresso pot - though we didn't get to try the barrel-aged cocktails or the alcohol-optional mixes.
A French restaurant and private dining complete the offer at the moment, although there's a roof space slated to open in the second half of 2016. A team head-hunted from some of Hong Kong's best bars should assure consistency when the Maestro is not in residence.
