Joe Schofield, formerly of London's Savoy, took over as head bartender in 2016 and his cocktails continue to draw those in the know and industry veterans, even if they're not eating. Choose between creative concoctions featuring ingredients from tofu to togarashi and modernist classics like the Smokey Old Bastard, prepared and served in a mason jar.
The place to be here, as with many bars, is at the bar, where drinks show that this longstanding Singapore cocktail institution still has it.
Cocktails include: Night shift at the potato factory (potato vodka, sky whisky, roast potato skin and espresso), Dropje (salted liquorice, rum, lime, and Spanish liqueur) and Jolly green giant (gin, maraschino, pea puree, citrus and agave). For the less adventurous there is also an inspired range of classics including the Saratoga cocktail.
Overall expect a relaxed bar with high-end restaurant formality. As with most bars the plum seats here are at the bar counter.
