Review

The late Sasha Petraske's Australian outpost is arguably the most faithful to his mould, with owners Lauren Schell and Michael Madrusan both being former employees from NYC's Milk & Honey and Little Branch. The Everleigh takes its cues heavily from the latter, with a thankfully more relaxed style of service and no strict adherence to those infamous behavioural policies.

Hand-cracked ice and fresh juices are par for the course these days, but the distinct lack of a menu is the key constituent that defines this experience. Fast and considered service comes as a pleasant bonus. Booths and limited bar seating are purposely designed to keep groups to a maximum of six, ensuring the space stays intimate and rarely feels overcrowded. Wood-paneled walls hold little in the way of decoration, save for cabinets holding old tomes and shakers along with an official prescription for Bourbon during prohibition.

The spirit selection tends to focus on cocktail ingredients first and neat spirits second. A strong showing from American whiskey and Amaro categories also doesn't leave Scottish and Mezcal lovers behind. One of the city's best choices for bar aficionados, unless you're out to dance til 5am.
