For a dose of solemn, ritualistic high Ginza style, look no further than D.Bespoke, a temple to the art of Japanese bartending. The man behind the stick, when he's not in Beijing tending to Glen and D.Bespoke, is Daiki Kanetaka, and the barrels of cocktails at the end of the bar have been ageing under the solera system for an impressive seven years.
Deep, soft, gentlemen's club armchairs line the long bar, and, although there's also private seating around the back, the bar is likely the place to be for your personalised prescription. There's an impressive range of whiskies, sherries, armagnacs and more, but ask one of the able, tweed-clad staff for a recommendation that suits your palate.
A seven-year-old Negroni came wrapped around a block of ice and packed with rich, intense flavours. The tropes of Japanese bartending - nuts and dried fruit nibbles, hot towels, painstaking perfection - are all present and correct. The sombre entrance hall out front pays tribute to all things bespoke and Japanese, including an eye-catching display of hand-made shoes.
