Named after Bill Evans' Waltz for Debby jazz masterpiece, this Japanese-styled bar is owned and run by the highly regarded and experienced bartender, Gento Torigata.
Guests occupying the dozen seats at the eight-metre Elm bar counter can choose from a cocktail menu split into 'In Season' and 'Evergreen' sections. The seasonal section references Japan's segmenting the year into 72 micro seasons. The 'Evergreen' cocktails are less seasonal and harness molecular techniques such as fermentation, carbonation, and centrifugal clarification. Classic cocktails are not listed but are served on request.
Guests relegated to the other seats are restricted to a selection of highballs and aperitifs.
