Inspired by a 1800s recipe for Planter's Punch that included ambergris and observing that most liqueurs have a one-dimensional flavour profile, bartending elder statesman Salvatore Calabrese sought to create a liqueur that was floral, citrus and minty, the result being Acqua Bianca.
To make his dream liqueur a reality, Salvatore "The Maestro" Calabrese teamed up with De Kuyper Royal Distillers who launched Acqua Bianca in February 2020.
Acqua Bianca is made using all-natural ingredients, including lemon verbena, bergamot from Calabria, peppermint and rose, "bound with essence of ambergris." For a liqueur, Acqua Bianca has a very low sugar content of just 150 grams of sugar per litre.
Acqua Bianca's packaging resembles a book, with the label as the spine and this was designed by Salvatore's daughter, Francesca Calabrese and her design agency Five Foot Eight.

Appearance:
Crystal clear.
Aroma:
Incredibly aromatic with peppermint, zesty bergamot oils, floral rose and honeysuckle.
Taste:
Peppermint freshness with an almost creamy mouthfeel, floral flavours and light cleansing citrusy acidity.
Aftertaste:
Long minty fresh finish with lingering rose and citrus zest.
Overall:
Wonderfully aromatic, Acqua Bianca has notes of mint, rose and citrus and can be used in place of a traditional white crème de menthe to add more complexity to a cocktail rather than one-dimensional mint.
