Meaning "the beauty of the seasons", KI NO BI comes from Japan's first dedicated gin distillery and, unusually, is based on rice spirit.
KI NO BI gin is flavoured with 11 botanicals: juniper, orris root, hinoki, lemon, yellow yuzu, sansho pepper, kinome, gyokuro tea from Uji, ginger, red shiso and bamboo leaves. These are steeped in neutral rice spirit overnight before traditional distillation in a pot still. The distillate is reduced to bottling strength with underground Fushimi water.
