Having been in the hospitality and F&B business since the tender age of 12, starting out at his parent’s café, Nicholas later went on to participate in developing Sydney’s unique yet diverse coffee scene, capturing the totality of the city’s coffee zeitgeist as a barista.

He then went backpacking around Asia and Europe and moved to London in 2007 where he opened successful venues such as Jamie’s Italian (Kingston & Canary Wharf), he then became Head Mixologist for Drake & Morgan opening The Folly & Anthologist where he conducted master classes. He opened the Lounge bar at W London – Leicester Square as Bar Manager, Bar manager for La Bodega Negra and for his final stint in London, he opened the Blind Pig at Social Eating House, part of the Jason Atherton Group. In 2014, Nicholas moved to Singapore and rebranded The Study & The Library, establishing the bar to be one of the best in Asia. He is now the General Manager and Bartender of L’Aiglon, one of Singapore’s best cocktail bars located on Neil Road / Duxton Hill.

When he is not busy working his magic behind bars concocting unique and innovative cocktails, Nicholas spends his time leading a healthy balanced lifestyle and is passionate about art and music.

Now, at L’Aiglon, Nicholas is shaking up the craft cocktail movement and puts the spotlight on his concocted cocktails inspired by Asian touches and Disco era drinks.

Nicholas’ Long Bar Sling

Glass: Hurricane
Garnish: Gherkins
Method: Shake first 7 ingredients with ice and strain into ice-filled glass. Top with ginger beer.

• 50 ml Peanut Monkey 27
• 35 ml Cherry Heering
• 5 ml Pandan Tincture
• 10 ml Kamm and Sons
• 25 ml Fresh lime
• 1 dash Angostura Aromatic Bitters
• 1 dash Peychaud’s bitters
• 50 ml East India Ginger Beer
