Instead of mixing bacon fat and bourbon, is sous vide cooking (cooking Bourbon & Bacon in sous vide plastic bag, in a water bath) a better alternative or not?

Won't achieve the same. I'd stick to fat washing and enjoy eating the bacon grilled as part of the process.
