Few bars can claim a place in cocktail history quite like Giacosa. This venerable Florentine café is closely associated with the birth of the Negroni, as Giacosa is said to be where Count Camillo Negroni asked bartender Fosco Scarselli to strengthen his Americano with gin in place of soda water.
Today, Giacosa is housed on the opposite side of Via della Spada from its original location. Historic photographs of the original bar drove the design for the renovation, to replicate the feel of the original Florentine café in a contemporary cocktail bar.
Coffee and pastries set the pace earlier in the day before aperitivo takes over as evening approaches. Unsurprisingly, the Negroni looms large, and ordering one feels almost obligatory, although the cocktail list ventures well beyond the house's most famous serve.
