Behind an unassuming wooden door, marked by a pink light, Donkey brings a touch of 1920s America to the heart of Bologna. Opened in 2020 by Michele Collina, this atmospheric cocktail bar draws inspiration from the clandestine drinking dens of Prohibition-era America, combining secrecy and theatricality with contemporary cocktails.
Reservations are required, and guests receive a complimentary membership card on arrival. Inside, Donkey unfolds across two floors and several individually styled spaces, with lighting, music and furnishings evoking the glamour of the Roaring Twenties.
Donkey's latest cocktail menu, "Moonshine", launched in October 2026, takes the speakeasy theme a step further. Its twelve drinks celebrate personalities associated with the era, from Hollywood stars and jazz musicians to notorious gangsters and political figures. Each cocktail captures something of its namesake's character through ingredients, flavours, and textures, while the menu's black-and-gold Art Deco styling reinforces the period atmosphere.
Although the inspiration is firmly rooted in the past, the cocktails aren't limited to historical recipes, and the menu uses modern techniques throughout.
