Inzalo is a small-batch South African agave spirit produced from wild, red-tipped agave plants growing in the rugged Klein Karoo region of the Western Cape.
Descended from agaves originally brought from Mexico centuries ago, these plants have adapted to the area's arid climate, intense sunshine and mineral-rich soils, developing characteristics that differentiate them from their Mexican ancestors.
Founded by Sebastian O'Keefe and Diego Avila, Inzalo takes its name from the Zulu word meaning "descendant", acknowledging the agave's Mexican origins and evolution in South Africa.
The mature agaves are harvested by hand and steam-cooked to convert the plant's starchy sap into fermentable sugars. The agave is shredded to release the sugary juice, which is fermented using locally sourced wild yeast, and distilled in small batches using a hybrid copper column still. The spirit is made without added sugar, colouring or flavourings.

Crystal clear.
Earthy roasted agave with faint cement floral aromas.
Roasted, faintly chocolaty with roasted coffee, toffee and cinnamon spice.
Chocolaty notes continue with salty caramel and cinnamon.
Inzalo is proof that good, and indeed interesting agave spirits aren't limited to Mexico. South Africa has long been regarded for its wines, and perhaps now also for its agave spirits.
