Acqua di Cedro is a liqueur made with Cedro lemons and is not dissimilar to limoncello but with a crystalline appearance. Despite being made by Nardini who are famous for grappa, this liqueur is based on Italian grain neutral spirit and does not contain grappa.
Named after Citron Medica, a lemon-like variety of citrus fruit which contains very little juice, Acqua di Cedro is flavoured by steeping the thick peel of the fruit in alcohol.

Crystal clear.
Clean aromatic lemon zest oils and freshly squeezed lemon juice.
Lemon pie filling and freshly zested lemon oils. Slightly syrupy sweet and not as intense as the nose suggests.
Lingering freshly expressed lemon oils.
Compared to a quality limoncello, Acqua di Cedro is obviously colourless rather than opaque yellow and has a similar zesty lemon flavour, but is more intensely lemon, without the rounding lemon oils of a limoncello. Served neat, this arguably makes the limoncello preferable, but the clarity of the Acqua di Cedro may be beneficial in some cocktail recipes.
