Cascade Mountain Gin is flavoured by the maceration of botanicals rather than distillation, hence this gin's faint yellow hue. Fresh herbs and spice, rather than dried, are used. These include handpicked juniper berries from the Central Oregon high desert plateau.

Appearance:
Clear, light pale straw yellow.
Aroma:
(batch No. 211) Clean, fresh pine forest juniper rich nose with lemon pie citrus and delicate all-spice.
Taste:
Herbal spicy palate, perhaps more reminiscent of a Czech absinthe than most gins. Dry resinous pine notes build to hot black pepper.
Aftertaste:
Hot pepper spice finish.
