Acclaimed as being the first legal pot-distilled whiskey made in New York since prohibition, Hudson Baby Bourbon is double pot-distilled from fermented a mashbill of 100 per cent New York corn and aged in specially made small (3 gallon casks) American oak casks giving a high wood to whiskey ratio.
Remember, there is no minimum age requirement for bourbon (only 'straight' bourbon must be aged for a minimum of two years), so don't allow the fact the label says "Aged under 4 years in American Oak" mislead you into thinking this is a 4-year-old whiskey. However, the small new oak casks used impart their flavour much quicker and quite differently to regular-size barrels.
Each hand-filled and numbered apothecary-style bottle is finished with a natural cork stopper and wax seal which must be cut with a knife to open. Bottled without chill-filtration.

(year: 2011, batch: 19, bottle 1452) Clear, coppery amber forming tight beads with slow falling thin legs.
Corn, vanilla, roasted nuts and inside of an old oak wardrobe with buttery nubuck leather, caramel and freshly baked bread. Nose becomes more toasty as it is left to open.
Corn,oak, acorn and leathery vanilla flavours fight for attention. Nothing restrained or finessed about this baby. The heavy oak influence adds bitter tannins and a ginger spice note.
Caramel and dry oak with gentle ginger, pepper and clove spice, lingering old leather.
