This Belgian-style ale was inspired by Orval and is made with two fermentations using Belgium yeast - one using Brettanomyces, a slow-growing wild yeast. Granulated beet sugar is added during the fermentation process. Matilda has a clear appearance due to centrifugal filtration removal of dead yeast

(bottled 14/10/2011) Clear, coppery amber with a medium off-white head leaving moderate lacing.
Yeasty currant bun and clove.
Bitter sweet, clove, biscuit, butterscotch palate with faint overripe banana and lemon.
Raison flavours emerge in the toasty, lightly clove spiced finish.
