This Cream Gin is the base to The Black Cat's Martini, the signature cocktail at London’s The Worship Street Whistling Shop, where this gin is also made using reduced pressure distillation in the bar’s own in-house lab.

Worship Street’s Ryan Chetiyawardana noticed that drawings of Gin Palace’s from the 18th Century often depicted barrels labelled Old Tom Gin and Cream Gin. After speaking to other industry folk he concluded that Cream Gin was gin mixed with cream and sugar to soften the harshness of the gin. (Incidentally we believe differently). So Ryan and the chaps at Worship Street set out to make a cream gin but instead of infusing the gin with cream post distillation, the used fresh cream as a botanical added prior to distillation. They infuse the cream with a citrusy gin and then redistill using a rotovap.

The distillation process removes all of the larger cream molecules producing a clear gin which can be used and stored in the same manner as regular gins without refrigeration.

Appearance:

(bottle No. 1831) Crystal clear.

Aroma:

Pine, lavender and camphor from the juniper, naan bread-like coriander and clean stable-like orris root with nutty angelica root and generous citrus zest. All very classic but with a note akin to a bag of Tooty Fruities sweets being more obvious than dairy.

Taste:

The palate echoes the nose but with celery (perhaps angelica seed) and pronounced lavender and jagged cracked black pepper. Again, dairy notes are not obvious.

Aftertaste:

Lingering citrus, black pepper and lavender.
