Spanish for owl, El Buho is made from 100% Espadin agaves roasted in a stone pit with local mesquite wood for 7 days and nights. The agaves are crushed using a donkey-pulled Tohona wheel, and the resulting sweet juice fermented in a wooden vat before being double-distilled in a copper pot still.
