This rosemary (or Romarin in French) flavoured sugar syrup has a bright, emerald green colour and a strong flavour, redolent of eucalyptus and with a slight bitter aftertaste. The flavour of this Mediterranean herb combines well with fruit flavours, such as apricot, orange and tomato.
