Distilled from a mash of malted and unmalted barley, triple distilled in copper pot stills and matured in a combination of American oak ex-bourbon barrels and first-fill Spanish oak oloroso sherry seasoned butts for a minimum of 21 years, with some whiskeys in the blend as old as 28 years old.

Redbreast 21 uses a heavier pot still whiskey than younger Redbreast bottlings and this is balanced by the use of more sherry casks. It is bottled without chill filtration.

Launched 26th September 2013, Redbreast 21 year old is the ninth Single Pot Still Irish Whiskey to be added to the Irish Distillers portfolio.

Appearance:

Clear, coppery amber.

Aroma:

Autumnal apple, fallen leaves and acorns with tropical dried fruit – mango, pineapple and guava. Toasted barley, new leather, light pot still spice and cacao.

Taste:

Delicious sweet sherry, sweet ripe red apple, leather, currants and sultans all held in check by spirity black pepper notes from the generous bottling strength and dry spicy oak, nutmeg and cinnamon spice. Water upsets the balance – best enjoyed neat.

Aftertaste:

Toasty oak, creamy barley, cigar box, vanilla fudge and lingering cinnamon spice.
