Holy Grass is made by Martin & Claire Murray at their distillery in Caithness, Scotland where they distil neutral spirit with Scotch botanicals including highland apples and most notably Holy Grass, known in Poland as ‘bison grass’, this is Scotland’s answer to Poland’s bison grass vodka.
Holy Grass (a.k.a. hierochloe borealis/ordorata or Anthoxanthum nitens) is a grass that was once used for basket weaving and on church floors to create an aromatic vanilla smell when walked over. The plant was discovered in Scotland by Robert Dick (1811–1866) a geologist and botanist, on the banks of the River Thurso close to where the Dunnet Bay Distillery sits today.

Faint creamy vanilla, grass, jasmine tea and gentle black pepper spice.
Opens with faint sweetness. Creamy mouthfeel with a light spice and delicate notes of grass, vanilla, red apple and jasmine tea.
Faint cream-of-soda vanilla, green apple, grass and black pepper.
Made at a husband and wife run artisanal distillery, this is Scotland’s answer to Poland’s bison grass vodka. Faintly sweet with a creamy mouthfeel and flavours of grass, vanilla, red apple and jasmine tea.
