Botanicals including coriander, caraway, rosemary, cardamom, juniper and cassia are distilled using vapor infusion in a pot still to produce a base gin spirit. This is blended with distillates of citrus and fig which are individually distilled at room temperature using low pressure distillation.

Appearance:

Crystal clear.

Aroma:

Pungent spirituous black pepper and coriander spice, herbal, piney juniper, zesty citrus and lemon grass, with musky, nutty angelica root. A splash of water releases herbal complexity.

Taste:

Zesty citrus – particularly mandarin, bold spirituous peppery spice and pleasing fresh freshening piney juniper and lifted by complex herbal notes – particularly thyme and rosemary. Herbal notes are amplified/released when water or tonic is added.

Aftertaste:

Lingering herbal notes in the long finish.

Overall:

A gutsy gin to please naval types with an accompanying firepower of 57% alc./vol.. "Batten down the hatches" and prepare for a storm with a G&T that has plenty of spice, citrus, cucumber and herbal complexity.
