The result of a collaboration between two family-run Cornish farms on opposite banks of the Fowey River:
Haye Farm with its unique cider heritage on the North and Colwith Farm with its plough-to-bottle distillery on the South. Hence, unusually, the base spirit for this gin blends neutral spirits made from apples and wheat. This is distilled with six classic London dry gin botanicals along with fresh Haye Farm apples and hazelnuts. The recipe used is "juniper heavy" with the berries comprising 50% of the botanical charge weight.
Botanicals
1. Juniper
2. Coriander
3. Angelica roots
4. Lemon peel
5. Orange peel
6. Grains of paradise
7. Haye Farm apples
8. Hazelnut

Crystal clear.
Piney juniper and pungent zesty lemon with baked apple.
Genousous concentration of botanicals - many other distillers would have diluted back. The piney juniper and zesty lemon from the nose continue.
Attractive spice cleanses the long finish.
Intense piney juniper and pungent zesty lemon.
