Released in March 2022, Archie Rose's White Cane is unaged white rum made with sugarcane molasses sourced from New South Wales, "cold distilled" in a low-pressure copper still. In Australia "rum" must be aged for a minimum of two years in wood, hence White Cane can't be labelled rum.

The molasses used are high-test molasses, apparently these are molasses produced from cane juice but not as a by-product of sugar production so have not been subject to the high temperatures associated with sugar extraction.

Appearance:

Crystal clear.

Aroma:

Pungent and slightly funky with not quite ripe pineapple and coconut flesh with subtle overripe banana.

Taste:

Dry and grassy with pineapple, mango, red apple and assertive black pepper spirituous notes. More subtle overripe banana and red bell pepper.

Aftertaste:

Long. Dehydrated raspberry with peppery spice and mild minty freshness.

Overall:

Very expressive of its sugar cane origin and more a mixing than sipping rum.
