Caroni, a now legendary rum distillery on the island of Trinidad, closed in 2001 after 83 years of production, but casks of its rum lay forgotten in the ageing warehouse until being discovered in 2004. This exceptional gin was aged in one of those casks.

Many "cask aged" gins are tannic, over-aged and best avoided. However, some are good and very few are exceptional; this is one of the few. The mellowing effect of cask ageing on the juniper spice is profound, while the notes imparted by the Caroni rum are much more impactful than from the oak, indeed, the lack of discernable colour leached from wood is a sign its subtly. Engine Caroni works brilliantly in a five-to-one Dry Martini, stirred without adding orange bitters, with a lemon zest twist expressed and discarded and finished with a skewered chilled and rinsed green olive.
