Each wine in this cream sherry (Oloroso and Pedro Ximénez) is matured separately in its solera for 12 years.
After blending, the sherry is moved to a 45-cask solera for a further 3 years aging. In the past, sherry casks were carried on ships sailing for the Indies as this helped develop complexity. Lustau's East India sherry is designed to mimic this style.
