Made using neutral spirit made at Rock Town Distillery, redistilled in a copper pot still with the botanical’s flavour added by vapour infusion. The six botanicals used are: juniper berries, angelica, cinnamon, anise, lemon and orange peels.

The spirit’s vapours pass through a perforated basket filled with botanicals placed between the still and the condenser. Bottled by hand, signed and numbered.

Appearance:

Crystal clear.

Aroma:

Tangerine, lemon peel and pungent juniper with jelly baby sweets, new leather/damp wood/mushroom, cream-of-soda vanilla and mild white pepper spice.

Taste:

Clean, creamy and spicy. Water tames but fails to quash the peppery spice which sits so well with smoothing creaminess, vanilla sponge and sweet citrus oils. Piney juniper leads throughout yet is a side attraction.

Aftertaste:

Creamy cream-of-soda persists to ease the spicy pine and zesty lemon finish. Interestingly different.
