This is a 'true' amontillado – it started off as fino but during the ageing process the protective flor died exposing the sherry to oxygen. This caused the colour and style to change, contributing a more nutty character.

Appearance:
Clear, deep golden amber.
Aroma:
Prune, boat varnish, tobacco, toasted almond, baked pear and faint clove.
Taste:
Nutty, varnished wood and green olives with herbal and fruit complexity. Dry woodiness, salt and acidity balances light honey.
Aftertaste:
Grassy, green olives and elegant wood.
Overall:
A bone dry and superbly complex amontillado with green olive and nutty flavours.
