"Upside Down" is not only the cocktail name but the name of a project created to connect the local community with the bar community by challenging bartenders to take waste from local businesses and make something special from it.

UPSIDE DOWN is not only an "Inverted White Russian" made of Ketel One Vodka, Clarified Milk Liqueur and Spent Coffee Foam, but it's also a project created to connect the local community with the bar community.

Imagine that a local shop is able to monetize its waste thanks to you and for a "Good" reason.

Isn't this a way to "Upside Down" the market by involving the local community?

So I went to "Chicco", a local coffee shop that in turn partners with a local roastery and local farmers. I asked them to give me what they would have thrown away and I bought them at a good price. I left the shop with 5 liters of milk that would have gone bad, 500 grams of spent coffee grounds and I only paid 3€.

We both saved money, WE AVOIDED GENERATING WASTE AND I MADE AN AMAZING DRINK OUT OF IT, celebrating a symbol of the Italian tradition: the Cappuccino (coffee and frothy milk).

Because turning waste into a cocktail is an "everyday challenge" that inspires bartenders to push creativity beyond imagination.

And if we want to live as a community we must support the community. That's why several bars in the area have joined the "Upside Down" project.

In less than 10 days, almost 500 cocktails were sold, saving 50 liters of milk and 5 kg of coffee, while supporting a local shop which in turn collaborates with small local producers.

We certainly didn't save the world, but we helped make it better and I believe it can also be an inspiration for other bartenders from different cities and different countries.

Local Bartenders, a local shop, a local roastery, local farmers, all connected in one cocktail: "Upside Down".

Upside Down

30ml Ketel One Vodka
90ml *Clarified Milk Liqueur
*Spent Coffee Foam (on top)

*Clarified Milk Liqueur:
600gr Milk
300gr Ketel One Vodka
100gr Sugar
100gr Citric Solution 6% (or 100gr Lemon Juice)
[Let rest for a night, filter it to Milk-Wash everything and bottle it]
//For Each 1000ml add:
100gr Sugar
3gr Salt
_18° Brix
_12% Abv

*Spent Coffee Foam:
100gr Spent Coffee Grounds
100gr Ketel One Vodka
900gr Cold Water
[Cold Brew]
//For Each 1000ml add:
200gr Sugar
12gr Gelatin (Sheets)
[Dissolve the gelatine and the sugar in the mixture at 60°C and put everything in a Cream Siphon, place it in the fridge and wait for it to cool]

Method:
Stir and Strain + Spent Coffee Foam (on top)

Glassware:
Lowball Glass
