Pelo Del Perro ("hair of the dog" in Spanish) is made by the Cortés family at their palenque in Oaxaca, where the Madrecuishe used to make this mezcal grow wild close to the distillery.
The bottle's label is made with recycled agave fibre by artisans in Oaxaca.

Raw ingredients: Madrecuishe piñas, 5 tonnes
Batch size: 450 litres
Roast: Stone pit, 15 days (including 4 days cooling). Oven fuelled with encino negro (black oak).
Rest/dry fermentation: 5 days
Grind: Ox-drawn tahona mill
Fermentation: Open air in sabino, natural yeasts, 8 days
Distillation: 350 litre copper alambique with refrescadera. Single pass.
Water source: Natural spring well

Crystal clear.
Earthy and herbal with pine needles, coal tar and hay bale.
More piney than earthy on the palate, with pleasing herbaceous notes. Faint metallic note, but in a good way.
Delicately spicy with delicious herbal minerality. Fades with coal tar.
The attractive label conveys this mezcals' place of origin and bristles with information. Our sample was bottle 180 of 186, batch MAD001, and this is an outstanding artisanal mezcal.
