In 2009, “formulist and chief bottle washer”, Tom Richter set about creating is now famous quinine cordial. Inspired by a 19th-century Peruvian recipe, Richter uses cinchona tree bark, citrus, herbs, spices, citric acid and cane sugar to make his Tonic which is named after Tom’s nickname ‘Tommer’.

Bartenders across New York are using Tomr's Tonic as a cocktail ingredient but it was originally designed as an alternative to tonic water in a G&T. Tom recommends the following simple "1,2,3" formula to make a perfect G&T: 1oz Tomr's tonic syrup, 2oz Gin and 3oz sparkling water (club soda). Due to a desire to avoid the use of preservatives, once opened Tomr's should be refrigerated.

Appearance:

Cloudy, amber. (It’s bottled without filtration so shake before use.)

Aroma:

Lightly spiced quinine (obviously) with black pepper, turmeric, nutmeg, black tea and tobacco.

Taste:

Bittersweet quinine with delicate spice, fennel, turmeric and nutmeg.

Aftertaste:

Dry quinine finish with delicate spice and lingering citric acidity.
